2 (3 ounce) package cream cheese, softened
1/4 cup white sugar
1 1/2 tablespoons rum
2 eggs
1 1/2 cups milk
2 cups evaporated milk
1 tablespoon vanilla extract
1/2 teaspoon salt
1 lime, zested and juiced
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round (9 inch) pans.
In a large bowl, cream together the cream cheese and sugar until smooth. Stir in rum, eggs and milk. Beat in evaporated milk, stirring to blend thoroughly. Stir in vanilla, salt and lime zest. Mix in pecans. Pour mixture into prepared pan.
Bake in preheated oven for 25 to 30 minutes in the preheated oven, or until bubbly and a toothpick inserted into the center of the pie comes out clean. Cool pie completely before transferring to a wire rack to cool completely.
