2 cans evaporated milk
1/3 cup white sugar
1 1/2 cups margarine, melted
3 tablespoons rum
2 eggs
1 (8 ounce) package orange flavored Jell-O
1 pound frozen orange chunks, thawed
3/4 cup milk
1 (1.2 fluid ounce) jigger vanilla extract
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Stir together the flour, sugar, margarine, rum and eggs; set aside.
In a large bowl, cream together the margarine, orange gelatin and white sugar until smooth. Beat in the flour mixture alternately with the milk, stirring just until incorporated. Gradually beat in the remaining marinade, mixing just until until incorporated. Stir in the gelatin at medium speed, scraping the sides and bottom of the bowl often.
Drop by rounded spoonfuls onto the cookie sheet where they will be about 3 inches apart. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Allow cookies to stand for about 1 hour before removing from the prepared cookie sheet. Do not cut into squares.
