4 (1 inch thick) breast halves
1/4 cup vegetable oil
2 tablespoons lemon juice
1 pound chicken breast halves
1 tablespoon lemon juice, divided
1 (8 ounce) package cream cheese, softened
crackers
1 teaspoon soy sauce
Heat olive oil in a large skillet over medium heat. Saute chicken shells on one side until light brown. Remove breasts and place in pan with lemon juice. Wait 2 to 3 minutes to allow breasts to cool.
Add lemon juice and oil. Bring to a boil, stirring occasionally. Remove from heat, remove pan from heat and allow chicken to cool.
Cook chicken in skillet on top of olive oil, flipping occasionally, until golden and opaque, 5 to 7 minutes. Remove chicken from skillet and transfer to a platter. Spoon 50/100 portion of lemon juice mixture and remaining lemon juice over breast and toss to coat. Serve immediately. Garnish with remaining crackers, sesame seeds, soba noodles and 2 tablespoons lemon juice to taste.
