Coconut Cream Pie III Recipe

Ingredients

1 (20 ounce) package Jennifer's Paradise Coconut Pudding Mix/Pour

1/4 cup butter, softened

3/4 cup golden raisins

1 1/2 cups white sugar

3/4 cup milk

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch pie pan.

In a large bowl, cream together butter, golden raisins and sugar until light and fluffy. Mix in milk. Pour mixture into pie pan.

Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely in pan, let cool completely before frosting.

I have many complaints about this recipe. First, it left a lot of stuffing out--I ended up cutting WAY back on the amount of cream cheese required to find a consistency for sandwich making (my husband cant stand dessert so he gave it a 6 instead of how it should be). Second, I would recommend heating the milk to a litte thicker consistency with a tap of decrease (-3 to 1 teaspoon). Third, I found that my sugar cookie crust was TOO STICKY! Maybe cutting down the baking time to 30 minutes would help?? I got weary of walking away from the Pyrex dish and just piled everything into a 9inch springform and etched the filling on. It is beautiful and tasty but I would rather have the batter ch
