2 tablespoons margarine, melted
1 cup white sugar
1/4 cup all-purpose flour
4 tablespoons dried apricots
3/4 cup chopped walnuts
1 teaspoon vanilla extract
4 1/2 cups rolled oats
2 cups cooked apples
1 cup diced pecans
In a small bowl, melt margarine and sugar. Stir in flour, apricots, walnuts and vanilla extract. Place on baking sheet or cookie sheet.
Bake in preheated oven for 10 to 12 minutes, or until edges are golden. Cool slightly. Roll out or cut into pieces. Serve warm.
