2 cups miniature marshmallows

1 cup cinnamon-flavored baking mix

Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, sift together the flour, baking powder, baking soda and lemon zest. Make a well in the center and pour in brown sugar, egg, vanilla, marshmallows, butter or margarine, lemon juice and cinnamon. Beat on low speed until blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.
I followed the recipe exactly making no changes and these were amazing! My husband complained when they were all gone. My only warning would be to be careful when grating the garlic, some people say it gives the cookies a burnt taste, but I didn't have garlic powder and didn't add it until after the cookies had been They are perfect cookies! I did not use garlic spray, instead I drizzled the oil on the top before putting them in the fridge and then drizzled it again on the bottom before putting them into the oven. I made this recipe as a hot fruit dressing for a pork roast at Easter. I ended up adding orange zest and juice of half a orange. I would recommend checking it the following day because the orange zest left something to be desired.
