1 tablespoon vegetable oil
2 cloves garlic, minced
1/3 cup chopped onion
1/4 cup chopped celery
2 potatoes, peeled and cubed
8 ounces chicken broth
1 1/2 cups peeled, cooked chicken breast meat
2 tablespoons butter
1 teaspoon paprika
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1 teaspoon dried marjoram
In a large skillet, heat the oil over medium heat. Saute garlic and onion until golden. Add celery, potatoes and broth. Cook, stirring constantly, for 2 minutes. Return chicken, celery mixture, broth mixture, chicken, celery mixture, chicken and celery mixture to skillet.
Add butter, paprika, salt, oregano, basil, rosemary and marjoram and simmer for 1 or 2 minutes. Pour chicken broth mixture over all and let simmer for 15 minutes.
