4 egg whites
1 cup white sugar
2 teaspoons vanilla extract
1 cup old-fashioned oats
2 cups vegan margarine
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat egg whites until foamy. Mix in sugar, vanilla extract and oats. Stir the margarine into the egg whites. Pour the mixture into the prepared pan.
Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack. Let cool completely before cutting into squares.
