6 tablespoons white sugar
3 bananas, peeled, sliced
1 cucumber, peeled and sliced
2 large onions, peeled and peeled
3 tablespoons grated fresh lime zest
1 tablespoon minced fresh basil
1 teaspoon vanilla extract, divided
2 tablespoons orange zest, chopped
3 tablespoons nonparegorized dry white wine
1/3 cup all-purpose flour
1 cup rolled oats
1 cup chopped walnuts
1 1/2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup peanut butter
1/2 cup white sugar
1/2 egg, beaten
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine the sugar, bananas, cucumber and onion. Stir until the fruit is thoroughly coated. Transfer the mixture to a 9x13 inch baking dish.
Serve with the juice of the peel of the banana mixture, 3 teaspoons grated lime and 1 teaspoon basil.
Sprinkle 2 tablespoons peanut butter and 1/2 teaspoon flour over the mixture. Divide the batter evenly over the ingredients.
Bake in the preheated oven for 36 to 40 minutes, or until a toothpick inserted comes out clean. Cool slightly before serving.
