1 pound ground beef
1 pound lean ground pork
1 pound shortening for frying
3 tablespoons mayonnaise or lemon-lime flavored flavor
3 tablespoons heavy whipping cream
1 large onion, sliced
2 tablespoons pecans (optional)
1 (12 ounce) package frozen chopped vegetables
1 cup shredded carrots
3 tablespoons minced fresh parsley
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
Place ground beef and pork in a large heavy skillet; brown on all sides. Drain grease, and place in heavy plastic bag or container with enough room in bag to allow this to be used for storage (12 fluid ounces).
Heat 2 tablespoons olive oil in a large frying pan, over medium-high heat. Stir in the butter and mustard over medium-high heat. Saute until all the brown bits are set, about 5 minutes. Stir in the eggs, lima beans, orange juice, carrots and parsley. Fry for 2 minutes, turning periodically. Fry for 5 minutes. Mix well and serve in bowls or plates.
