1/2 cup sliced yellow onion
6 slices bacon
1/2 cup chopped green onions
2 slices sharp processed cheese, cubed
1 package (12) burrito-style flour tortillas, warmed
1 (8 ounce) package cream cheese, softened
1 teaspoon sour cream
1/4 teaspoon chili powder
1 cup shredded Cheddar cheese
1 (6 ounce) can sliced black olives, drained
1 cup sliced fresh tomatoes
1 package (4) mayonnaise
Preheat the oven to 350 degrees F (175 degrees C).
Rub a large baking dish with flour. Place the bacon slices, green onions, cheese, sour cream, and chili powder in the baking dish. Sprinkle with Cheddar cheese and black olives. Pour the egg mixture over all. Place the skillet on the prepared baking sheet.
Bake in preheated oven for 25 minutes, or until bacon is heated through. While it is still warm, place the flour tortillas into the baking dish and roll in salsa. Sprinkle with Cheddar cheese and black olives. Bake for 10 minutes. Roll in salsa and cheese and continue to bake for another 10 minutes, until the cheese is melted.
During the last 5 minutes of baking, place the whole mixture in the center of the baking dish, and brush the top with egg mixture. Cover, and cool on the rack for 2 to 4 hours. Refrigerate overnight to chill before serving.
