2 sweet potatoes
2 large eggs
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
4 slices Swiss cheese
2 carrots, grated
1/2 onion, chopped
2 cups shredded Cheddar cheese
1/4 cup milk
1 1/2 cups sliced fresh mushrooms
Preheat oven to 350 degrees F (175 degrees C).
Place sweet potatoes in an ungreased 9x5 inch baking dish. Arrange eggs in bottom of baking dish. Sprinkle with butter. Pour cream cheese all over eggs and mix with margarine. Sprinkle with Swiss cheese, Swiss cheese and carrots. Top with onion; pour cream cheese all over eggs.
Bake at 350 degrees F (175 degrees C) for 45 minutes.
