1 1/2 cups whole wheat flour
1 cup soy flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup white sugar
1 egg
1 tablespoon vegetable oil
1/2 teaspoon ground black pepper
5 tablespoons distilled white vinegar
1/4 cup vegetable oil
1 egg white
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, blend whole wheat flour, soy flour, baking powder, salt, sugar, egg, vegetable oil and pepper. Stir into the mixture until well mixed. Spread the mixture on a casserole dish.
Bake in preheated oven for 45 minutes, turning skillet halfway through. Remove from oven and drizzle with vinegar and olive oil. Allow to cool.
Assemble the casserole: Place casserole in baking dish and brush tops with egg white. Spray with cooking spray.
