1 cup coffee granules
4 cups espresso beans
1 cup sugar
2 tablespoons organic creamer sugar
2 tablespoons baking soda
1 1/2 tablespoons cinnamon
In a blender combine coffee granules, espresso beans, creamer sugar, baking soda and cinnamon. Blend until well blended and powdery. Pour into cups and serve.
As another reviewer noted, the blend of coffee and espresso goes really well together. I usually just pour hot coffee directly into the blender, but this is so much better. This coffee really makes an impact. Thanks!
This was a great way to use my stand mixer's rarity - it worked instantly. Used 2 batches of dough, for a total of 6. I didn't have a lime, so I put the zest in the lemon, lemon juice, and grapefruit slices instead. Got 8 squares perfectly. The oatmeal adds a lot of texture to this dessert, and we are not fans of removing the egg whites, of course. My husband loved it, but my 3 year old didn't. Maybe it is because she is really bad at holding down the dough, but she does not like eggs mixed in with figs or mushrooms, and never let me have them both. What a shame. I will not be making this at Easter...
