2 tablespoons granulated sugar
4 tablespoons cornstarch
2 tablespoons lemon juice
1/2 cup water
1 (3 ounce) package lemon flavored Jell-O
1 egg
1 tablespoon corn syrup
1 whole kernel corn, diced
1/2 cup chopped pecans, divided
1 cup sliced almonds
In a small saucepan, combine sugar, cornstarch, lemon juice, water and lemon gelatin. Bring to a boil over medium heat.
Add gelatin mixture and water; boil. Remove from heat. Add lemon gelatin mixture and cornstarch; bring to a boil over medium heat. Stir lemon gelatin mixture into boiling mixture. Boil, stirring constantly, for 3 minutes.
In a medium bowl, whip egg until foamy. Gradually beat in syrup and corn syrup. Beat in lemon gelatin mixture. Stir vigorously, mixing thoroughly after each addition, until mixture is stiff. Pour batter into prepared dish. Cover and refrigerate for 3 hours or until completely set. Garnish with pecans and almonds.
