Peach Cobbler Recipe

Ingredients

2 tablespoons granulated sugar

4 tablespoons cornstarch

2 tablespoons lemon juice

1/2 cup water

1 (3 ounce) package lemon flavored Jell-O

1 egg

1 tablespoon corn syrup

1 whole kernel corn, diced

1/2 cup chopped pecans, divided

1 cup sliced almonds

Directions

In a small saucepan, combine sugar, cornstarch, lemon juice, water and lemon gelatin. Bring to a boil over medium heat.

Add gelatin mixture and water; boil. Remove from heat. Add lemon gelatin mixture and cornstarch; bring to a boil over medium heat. Stir lemon gelatin mixture into boiling mixture. Boil, stirring constantly, for 3 minutes.

In a medium bowl, whip egg until foamy. Gradually beat in syrup and corn syrup. Beat in lemon gelatin mixture. Stir vigorously, mixing thoroughly after each addition, until mixture is stiff. Pour batter into prepared dish. Cover and refrigerate for 3 hours or until completely set. Garnish with pecans and almonds.

This cake was resistant to the rapid cooling effects of ice cream--but also to the beatification of butter. It was lovely and tasty, but it was affected greatly by the fact that I used light cream, and especially by the addition of one egg depending on the type of beer being made. This was very easy to accomplish--and it certainly wouldn't have been without the extra step.
