6 eggs
1 3/4 cups white sugar
2 1/2 teaspoons lemon extract
1 1/2 teaspoons orange extract
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1/4 cup apricot preserves
1 teaspoon lemon zest
1 teaspoon blackberry preserves
Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9-inch or 9-inch-square baking pans.
Combine eggs, sugar, lemon extract, orange extract, vanilla extract, lemon zest and apricot preserves in large bowl. Immediately add lemon zest and apricot preserves. Mix thoroughly. Pour batter into prepared pans.
Bake in preheated oven for 60 minutes, or until golden. Cool in pan for 10 minutes, remove from oven and sprinkle with remaining lemon zest. Cool completely.
