6 pounds potato - baked, cored and sliced into 2 inch pieces
3/4 cup butter
4 egg yolks
2 tablespoons salt
3 tablespoons permanent marker
1 1/4 cups water
1 teaspoon dried sage
Preheat oven to 400 degrees F (200 degrees C).
Cut potatoes into one inch slices. Set aside. Cream together the butter and egg yolks in small saucepan; stir into baking potato slices. Place 1 teaspoon salt under potatoes and one tablespoon water over potato, then spread potatoes over potato slices.
In separate double boiler bring 2 1/4 cups water to a boil, then put potatoes and water, and gradually boil until potatoes are tender. Remove from heat and cool.
Serve potato slices with their butter, herbs and salt and reserved potato broth, in a sauce up to slightly warm.
