Potato Coffee Pie VII Recipe

Ingredients

1 (8 ounce) container sour cream

1 (8 ounce) package cream cheese

1 cup finely chopped onion

1 cup butter

1/2 cup white sugar

2 eggs

2 (1 ounce) squares unsalted butter, softened

1 cup finely chopped celery

4 cups potato split

1 (3 ounce) package instant vanilla pudding mix

1 egg, beaten

1 cup milk

Directions

Preheat oven to 425 degrees F (220 degrees C).

In a medium bowl, combine the sour cream, cream cheese, onion, sugar, eggs and butter. Mix together, then pour over the turkey, ham, green tomatoes and celery.

Bake for 10 minutes in the preheated oven, or until bubbly and golden brown. Cool slightly before serving.

Combine the flour, baking soda and baking powder into a large bowl. Stir in the potato split, pudding mix, egg, milk, and vanilla pudding mix. Pour mixture into pie crust. Chill at least 2 hours before serving.

I really liked this recipe. I like green beans anyway, but it is nice to see how someone else prepares them. I used the USDA's Measuring Crumb method to determine the proper amount of flour to use, but anyone with experience in this area knows that even just starting out can be a little overwhelming. So I used brown sugar, but instead of 1/2 cup of sugar, I used 1/2 cup of plain sugar. The amount of liquid was still pretty thin, so maybe next time I'll add another can of mushroom soup. I had grape tomatoes, strawberries and raspberries for the salad. Yum and perfect for summer.
