1/4 cup butter
1/8 cup white sugar
2 eggs
2 teaspoons vanilla extract
1/2 cup flaked coconut
1 teaspoon almond extract
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/4 cup brown sugar
1 tablespoon baking powder
4 cups rolled oats
2 1/2 teaspoons vanilla extract
1/8 teaspoon almond extract
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together butter, sugar and eggs until smooth. Beat in 1 teaspoon vanilla, 1 tablespoon coconut, brown sugar, baking powder and flour until light and fluffy. Combine the oats, 2 teaspoons vanilla and almond extract; mix well. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until edges are golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
