1 cup zucchini, diced
1/2 cup frozen Yukon gold potatoes
1/2 cucumber, peeled and chopped
1 cup frozen green beans
1/4 cup olive oil
1 (3.5 ounce) package cream cheese
1 1/2 teaspoons chicken bouillon granules
1/3 cup frozen cherry tomatoes, thawed and drained
1/4 cup white sugar
1/4 cup cherry red wine vinegar
salt to taste
ground black pepper to taste
garlic powder to taste
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mix zucchini, Yukon gold potatoes, cucumber, green beans, olive oil, cream cheese, chicken granules, and red wine vinegar.
In a large bowl, mix sliced tomatoes, white sugar, salt to taste, pepper, garlic powder, and pepper flakes. Pour mixture into baked pie shell.
Bake in preheated oven for 20 to 25 minutes or until knife inserted in center comes out clean.
