1/2 cup vegetable oil
1 cup all-purpose flour
3 1/2 pounds white potatoes, peeled and cubed
2 pounds lean ground beef
green onions, chopped
1 tablespoon minced garlic
2 tablespoons minced onion
1 teaspoon dried parsley
1 small teaspoon dried basil
1/2 teaspoon salt
1 tablespoon dried thyme
1/4 teaspoon dried oregano
3 tablespoons Dijon mustard
1 1/2 tablespoons minced fresh parsley
Heat 1/2 cup oil in a large skillet over medium heat. Stir in the flour. Saute until lightly browned. Mix in potato cubes and salt, pepper and celery. Gradually stir in beef mixture, season with green onions, garlic, onion, parsley and parsley, cover, and cook over medium heat for 30 minutes, stirring occasionally.
