1 1/2 cups brown sugar
1 cup white sugar
1 cup butter
1 egg
1 (11 ounce) can fruit preserves
1 teaspoon lemon zest
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, combine brown sugar, white sugar, butter, egg, fruit preserves, lemon zest and cinnamon. Mix until smooth and pour into the prepared cookie sheet.
Bake for 12 to 15 minutes in the preheated oven, depending on the size of your cookie. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
This is a fantastic recipe! Not too sweet, not too brown, not too sweet. Just right. I've made these twice, and they are always a hit. I don't usually bake with cayenne peppers, but I made this recipe with the Aprizonia seasoning recipe and it worked fine. Definitely a keeper.
