2 cups butter, softened
2 1/2 teaspoons vanilla extract
1 1/2 cups milk
2 tablespoons honey
1 tablespoon lemon juice
1 cup white sugar
1/4 cup butter
1/2 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup candied cherries, unopened
1 cup cherries, diced
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch pan.
Beat butter, vanilla, milk, honey and lemon juice in large mixer bowl until smooth. Add sugar and lemon zest; beat until well combined. Stir in cherries. Spread evenly into pan.
Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into center of the cake comes out clean. Cool on wire rack.
I really liked this and delish! Homemade cranberry sauce was very helpful.
Quite a weak recipe, and my cat got burned eating whole candy canes, but still gave it credit for something. Not sure what caused it to burn though.
