1 cup all-purpose flour
1 tablespoon baking powder
4 egg yolks
1 1/2 cups white sugar
1 cup milk
1 tablespoon lemon juice
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, beat flour and baking powder until smooth. Add egg yolks, and stir into the flour mixture until all ingredients are well blended. Fold in sugar, milk, lemon juice and lemon zest. Spoon batter into prepared muffin liners.
Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Cool on a wire rack.
