1/2 cup butter, softened
12 ounces spaghetti sauce
2 cups shredded Cheddar cheese
1 green bell pepper, chopped
6 tomatoes, seeded and chopped
1 (12 ounce) container freshly grated Parmesan cheese
1/2 cup grated carrot
2 cloves garlic, finely chopped
1 (8 ounce) package shredded mozzarella cheese
1/2 pound mozzarella cheese, sliced cubes
In a medium saucepan over medium-low heat, mix butter, spaghetti sauce, cheese and pepper. Bring to a boil. Reduce heat to low and simmer for about 1 minute. Cover, reduce heat and simmer for 2 minutes or until cheese is melted. Top with tomatoes and top one half cup of mozzarella cheese. Add remaining mozzarella cheese, cheese and tomato. Simmer 20 minutes, stirring occasionally.
