3 eggs
1 (10 ounce) package frozen puff pastry, thawed and drained
1 (10 ounce) package frozen chopped spinach
1 cup frozen blueberries
1 cup frozen green beans
1/3 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup white sugar
1/2 teaspoon ground cinnamon
1/4 cup white sugar
1/4 cup cornstarch
1/2 cup water
1/2 cup white sugar
1/8 cup milk
1/2 teaspoon vanilla extract
1/2 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, beat egg yolks until light yellow. In a separate bowl, whisk together egg whites and 1/2 cup of milk. Stir egg yolks and milk mixture into egg whites until well blended. Fold in spinach and blueberries.
Pour into a 9x13 inch baking dish. Pour melted butter or margarine over top of dish. Sprinkle with salt and pepper.
Bake in preheated oven for 40 minutes.
To make the sauce: In a medium saucepan over medium heat, cook 1/2 cup of butter or margarine until melted. Stir in 1/2 cup of milk and 1/2 teaspoon salt. Cook until thickened, stirring constantly. Stir in 1/4 cup sugar, cinnamon, and 1/4 cup water. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 3 minutes. Stir in 1/4 cup of milk and 1/2 teaspoon salt. Simmer for 5 minutes. Stir in 1/4 cup of milk and vanilla extract, and return to heat. Whisk in cornstarch and 1/2 cup water. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 5 minutes. Stir in 1/4 cup of milk and 1/2 teaspoon salt and simmer for 5 more minutes. Stir in 1/4 cup of milk and 1/2 teaspoon salt and serve.
