Fruit Mound Cookies Recipe

Ingredients

2 cups all-purpose flour

2/3 cup white sugar

1 teaspoon baking soda

1/2 teaspoon salt

1/8 cup shortening

3 egg whites

1/4 cup water

2 tablespoons butter, melted

1 cup yellow cake mix

1/2 cup semisweet chocolate chips

1/2 cup semisweet prepared chocolate pieces

1/2 cup raisins

1 cup brown sugar

1 cup chopped walnuts

Directions

Preheat oven to 400 degrees F (200 degrees C). In a large bowl, mix together flour, sugar, spraying soda and salt. In a separate bowl, stir egg whites until stiff. Add water, 1 cup shortening, 1/2 cup white and 3 egg whites. Beat until just light and fluffy. Fold 1/2 of the batter into the whites, then into the other 50/50. Stir in the chocolate chips and chocolate pieces and raisins.

Drop batter by rounded tablespoons onto the prepared cookie sheet, 4 inches apart. Bake for 5 minutes, or until a toothpick inserted into center of the cake comes out clean. Using a knife or wooden pick, pull away from the baking sheet. Put bits and small pebbles of cake mix on baking sheet.

Move cookies to the refrigerator 22 minutes before snow. Bake for an additional 15 to 20 minutes, or until a toothpick inserted into the cake comes out clean. Cool completely before cutting into squares.
