2 1/2 pounds skinless, boneless chicken breast meat
1 tablespoon olive oil
1/2 cup chopped onion
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) package frozen mixed vegetables
1 cup cooked white rice
Place chicken in a slow cooker with olive oil, onion, cream of chicken soup, mixed vegetables and rice. Cover and cook for 1 hour or until chicken is cooked through. Stir in cooked mixed vegetables. Cook for 10 minutes more.
