1/2 cup shortening
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup honey
1 teaspoon vanilla extract
1/2 cup chopped pecans
Preheat the oven to 375 degrees F (190 degrees C).
In a medium saucepan, cream together shortening, sugar, egg and vanilla until smooth. Stir in flour, baking soda, salt and honey. Mix in pecans. Drop by rounded spoonfuls onto cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until cookie edges are completely crisp. Allow cookies to cool completely on baking sheet before removing to a wire rack to cool completely.
