1 cup margarine, softened
2 cups white sugar
1 egg
1 1/2 teaspoons lemon extract
2 cups jigger vodka
1 teaspoon orange juice
1 teaspoon lemon zest
In a medium saucepan, melt margarine and sugar over medium heat. Cook, stirring occasionally, until mixture is melted and smooth. Remove from heat and stir in egg and lemon extract; gradually blend in vodka, orange juice and lemon zest. Stir with a wooden spoon.
I added cardamom oil to the recipe & this is really good. Note that you don`t need to use vanilla for this. I had to make some alterations though. When I remove the cardamom seeds from the can, they release a sticky substance that helps bind the ingredients. I think this will be great as a snack or prelude to dinner.
