1 cup water
1 cup uncooked white rice
1 (14 ounce) can black beans
3 slices bacon, diced
1 onion, diced
1 (16 ounce) can whole kernel corn, undrained
1 teaspoon Worcestershire sauce
1 tablespoon chopped fresh parsley
1 clove garlic, minced
1/4 teaspoon crushed red pepper flakes
1 tablespoon vegetable oil
2 teaspoons dried oregano
In a medium saucepan bring water and rice to a boil. Stir in black beans, bacon, onion, corn, Worcestershire sauce, parsley and garlic. Reduce heat, cover and simmer for 15 minutes.
Stir in oregano and cook for 5 minutes, stirring occasionally. Reduce heat to low and simmer for 2 minutes or until rice is cooked.
