1 recipe pastry for a 9 inch double crust pie
1/4 cup margarine, softened
1/4 cup packed light brown sugar
1/2 teaspoon lemon zest
1/2 teaspoon garlic powder
2 eggs, beaten
1 cup chopped fresh parsley
1 cup sliced onion
1 cup finely chopped celery
Preheat oven to 400 degrees F (200 degrees C).
Place margarine in a large skillet over medium high heat. Cook a few minutes, until butter begins to appear. Remove from heat and stir in brown sugar, lemon zest, garlic powder, eggs and parsley. Mix well and pour mixture into pastry-lined baking dish.
Bake in preheated oven for 20 minutes. Remove from oven and sprinkle with parsley and citrus. Sprinkle with lemon zest and sprinkle with garlic powder.
Bake in preheated oven for another 10 minutes. Remove from oven, place on plate and remove foil. Cover with remaining parsley and citrus. Bake for another hour. Remove foil from baking dish and sprinkle with lemon zest. Bake an additional hour, stirring occasionally, until custard tower is set. Cool immensely.
