1 3/4 cups butter flavored shortening
1 1/2 cups packed brown sugar
1 cup white sugar
3 eggs
1 teaspoon vanilla extract
1 cup chopped pecans
2 tablespoons milk
2 tablespoons lemon juice
Melt shortening in a large saucepan over medium heat. Stir together brown sugar and white sugar, then set aside to cool slightly.
Beat together eggs and vanilla until mixture is light and fluffy. Beat in pecans, then milk, remaining 1/4 cup sugar; stir into vanilla mixture. Beat in lemon juice.
Place pan in refrigerator to chill overnight.
Preheat oven to 350 degrees F (175 degrees C).
After 6 hours, remove pan from refrigerator. On second side, mix chopped nuts with lemon juice. Spread mixture over cooled crust. Refrigerate overnight.
Remove crust from refrigerator to springform pan. Place pan on rack of oven to cool completely.
