2 pounds fresh okra, cut into 1-inch cubes
1 pound carrots, zucchini, onion, and celery leaves
1 cup chopped onion
1/2 teaspoon garlic powder
1 dash salt
3 tablespoons vegetable oil
Preheat oven to 350 degrees F (175 degrees C).
Place okra, carrots, onion, garlic powder, salt, oil and salt in a large mixing bowl. Mix until well coated. Transfer into a 9x13 inch baking dish or roasting dish.
Bake uncovered at 350 degrees F (175 degrees C) for 45 minutes or until okra is tender and carrots are glowing.
