2 eggs, beaten
3/4 cup white sugar
1/4 teaspoon salt
2 1/2 teaspoons vanilla extract
6 (8 ounce) packages cream cheese
4 ounces butter, softened
5 tablespoons lemon juice
1/2 teaspoon lemon zest
1 (15 ounce) can mandarin oranges
1 package instant vanilla pudding mix
1 1/2 cups white sugar
2 cups lemon juice
1 orange, sliced into rounds (optional)
Beat eggs and sugar in medium bowl. Add salt, lemon extract, lemon zest and lemon pepper. Mix well. Divide cream cheese and butter into 3 equal pieces; spread into 3 equal portions of cream cheese mixture. Add lemon juice and lemon zest.
Spread orange slices over mixture, placing in bottom of glass serving dish or trays. Garnish with sliced lemon fruit. Serve hot or cold.
