1 cup white sugar
1/2 teaspoon salt
1/2 cup water
1/2 cup butter
2 eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped dark chocolate
2 tablespoons buttermilk
1/2 cup butter
3/4 cup semisweet chocolate chips
4 tablespoons whipped cream
Preheat oven to 400 degrees F (200 degrees C).
In a medium saucepan combine sugar, salt, and water. Bring to a rapid boil. Lower oven temperature to medium-low, but heat steadily, until the mixture is the color of a mocha pod.
In a large bowl, cream together the butter and sugar until smooth and slightly thickened, until slightly thickened. Stir in the flour, baking powder, salt, and chocolate chips. Beat until well mixed. Stir in the buttermilk and vanilla. From here, stir together the remaining 1/2 cup butter, dark chocolate chips and whipped cream. Reduce the cooking time to medium-low and heat, stirring constantly until the chocolate and cookies are set up.
Spread cookies 2 inches apart onto ungreased cookie sheets. Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Cool on baking sheet for 2 minutes before removing to wire rack. Top each cookie with a scoop of mocha if desired.
