Gooey Fruit Pie III Recipe

Ingredients

1 (9 inch) unbaked pie crust

2 (15 ounce) cans frozen lemonade concentrate

1 (3.5 ounce) package instant whipped topping

1 (3 ounce) package instant vanilla pudding mix

4 quarts water

2 teaspoons strawberry juice

1 quart strawberry ice cream

3 teaspoons strawberry-flavored carbonated beverage

2 cups sliced fresh strawberries

2 oranges, sliced into rounds

1 recipe pastry for a 9 inch double crust pie

Directions

Cut the pie crust into 1/2 inch slices. Place pieces in an ungreased 9 inch square pan.

In a large stainless steel bowl, heat oven to 350 degrees F (175 degrees C).

In a large glass or plastic bowl, beat together lemonade concentrate, pudding, water and ice cream. Pour evenly into pan. Sprinkle with strawberries. Sprinkle with side of pie crust and top with oranges, strawberries and oranges.

Bake in preheated oven for 30 minutes. Cool completely. Refrigerate for at least 4 hours or until serving.

Serving warm, place slices of pie in hot water canning pan and place over high heat; add 1 cup lemonade concentrate, 10 minutes. Pour 1/2 of lemonade over pie and spread slowly over bottom of pie. Spread remaining lemonade over top. Cover tightly with greased foil. Refrigerate for 4 hours to chill. Garnish and serve immediately.
