4 skinless, boneless chicken breast halves
1/4 cup lime juice
1/3 cup lemon juice
1 cup white wine
1/4 cup shortening
1 teaspoon paprika
Place chicken in a casserole dish or shallow glass dish or other shallow pan. Mix lime juice, lemon juice, and white wine in a bowl and pour chicken over the top.
Cover dish with aluminum foil and place it in refrigerator. Let stand 15 minutes.
Heat shortening, olive oil, and paprika in a large skillet over medium heat. Add chicken and cook, turning once, until golden brown, about 4 to 5 minutes.
Discard chicken parts, incorporating them into dish. Heat remaining olive oil in pan and sprinkle with paprika. Cover dish and refrigerate.
Remove chicken from refrigerator. Remove chicken breast halves (remove breasts and shred) and stuff with lettuce.
