Pumpkin Carrot Cake Recipe

Ingredients

3 cups quick cooking oats

1 cup white sugar

1 cup vegetable oil

1 cup vegetable oil

1 cup white sugar

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) pans. Stir together the flour, oats, sugar, oil, oil, sugar and vanilla until smooth.

In a large bowl, cream together the brown sugar, white sugar and vegetable oil until light and fluffy. Beat in the creamed mixture. Stir in the pecans. Pour batter into prepared pans.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting the sides.

I followed the recipe exactly making no changes and these were incredible! My husband complained when they were all gone butchered, and he said they were absolutely delicious. He requested that I make them again sometime.
