2 quarts your favorite aged cheddar cheese, diced
2 pounds goat cheese, diced
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can pesto
Preheat oven to 250 degrees F (120 degrees C).
Place stuffed goat cheese and goat cheese mixture in a large bowl and cover with melted butter. Hold the mixture still in an upright bowl in order to separate the cheese pieces. Dredge in flour to form a crust.
Lay cheese pieces in a single layer in a large casserole dish. Pour soup over cheese pieces and sprinkle topping with coarse salt and pepper. Cover pan and bake in the preheated oven until cheese is fully cooked, about 15 minutes.
