Applesauce Pancakes Recipe

Ingredients

1/2 cup butter, softened

1/3 cup applesauce

1 cup heavy cream

1 egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 teaspoons baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9-inch round cake pans. Measures from the bottom of a 9x13 inch pan, 1/2 cup applesauce and 1/3 cup heavy cream. Stir the eggs, the vanilla extract, flour, baking powder, baking soda and salt, beat until well blended. Remove applesauce and cream from the refrigerator, and set aside.

In a large bowl, cream together butter and sugar until smooth. Beat in the egg, one at a time, then stir in the flour, baking powder and baking soda. Mix just until well blended. Stir in the flour mixture, then stir in the vanilla mixture, then stir in the flour mixture alternately with the applesauce and cream mixture. Pour batter into prepared pans.

Bake in preheated oven until a toothpick inserted into center of the cake comes out clean, about 40 to 50 minutes. Let cool in pan for 10 minutes before turning out onto a wire rack. Cool completely, and frost with a candy sprinkling of orange juice.
