1 1/2 cups white sugar
1 1/2 cups butter
1 tablespoon lemon juice
1/2 cup orange juice
2 cups sliced oranges
2 slices fresh strawberries
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon orange extract
1/2 teaspoon vanilla extract
2 teaspoons lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
In a large saucepan, combine sugar, butter, lemon juice, orange juice, oranges, strawberries, whole fruit and vegetable juice. Bring to a boil, stirring. Reduce heat to lowest possible temperature (190 degrees F) and continue stirring. Stir in the flour, baking soda, orange juice, lemon zest and vanilla extract. Pour mixture into the prepared pans.
Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool completely.
