2 (14 ounce) cans black beans, rinsed and drained
1 1/2 cups diced onion
1 1/3 cups white sugar
1 teaspoon salt
1/2 teaspoon dried oregano
2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
In a small bowl, mix all ingredients except for the ham.
In a large bowl, mix 4 cups water and salt and set aside.
In a large bowl, combine the rice, onion, sugar, salt, oregano, whole wheat flour, baking powder, baking soda and ham. Mix well and pour into a 2 quart saucepan. Place the pan behind a small dish or bowl and spoon the ham mixture over the rice mixture. Cover and refrigerate overnight.
In the morning, preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven for 60 minutes, until rice is tender.
