1/2 cup butter, softened
1 tablespoon lemon juice
1 egg, lightly beaten
6 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup brown sugar
1/2 cup chopped pecans
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, lemon juice and egg. Stir in the flour, baking soda and brown sugar until a smooth dough has formed. Roll dough into 1 inch balls and place 2 inches apart onto the prepared cookie sheets. Cookies should be at least 2 inches apart.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
