15 large baking potatoes, coarsely chopped
1 tablespoon butter
1/4 cup all-purpose flour
1/2 tablespoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
Preheat oven to 350 F. Spray a 1 quart baking dish with non-stick cooking spray.
Combine potatoes, 8 tablespoons of butter and flour in a medium bowl. Stir the potatoes with a fork to mix. About 1/4 about every 10 minutes, mash. Spoon about 2 tablespoons potato extra-virgin olive oil into prepared baking dish. Sprinkle reserved potato starch over potato mixture.
In a medium bowl, thoroughly mix baking powder, nutmeg and salt.
Bake at 350 F for 35 to 40 minutes or until fragrant. Cool completely before bottling.
