1/4 cup butter, softened
1 1/2 cups packed brown sugar
1 teaspoon vanilla extract
1/2 cup packed dark brown sugar
1 (1 ounce) package instant vanilla pudding mix
1 (3 ounce) can crushed pineapple, drained
1 1/2 cups flaked coconut
1 cup white sugar
1 egg, beaten
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Beat butter, brown sugar, brown sugar, instant vanilla pudding mix and crushed pineapple into 1 cup of heavy cream. Mix in the coconut, coconut sugar, and white sugar. Beat in the egg, vanilla extract and crushed pineapple. Drop by tablespoons on the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Cool completely on wire rack. Dust slice onto the cookie sheets and chill in refrigerator.
