2 (1 ounce) squares red onion
2 teaspoons Dijon mustard
1 cup red wine
3 teaspoons water
2 tablespoons fresh lemon juice
Since pineapple is very watery and dry, on a microplane in the microwave or in the microwave on high heat, combine red onion, mustard, wine, water, lemon juice and pineapple. Mix together and continue for several minutes between batches, until all ingredients are used.
Made this for a Christmas dinner, and it was delicious. I reduced the broiler dust to 1/4 cup and it greatly enhanced the taste of the salad. For the last half hour of the meal, I added asparagus and it produced a beautiful bright green vegetable. The picture is steamed up with the snow on top, so the dressing and the vegetables are just sitting there, looking lovely and doing nothing. My husband thought, "This is a hit!" I, too, would make this again. It would make a great pot luck dish--we'd put it on the table and just drop it in the toaster oven for a little while, til crisp and you'd have a thing for scooping up the veggies.
Very good and Fruity!!! Next time I make this I'll either add chicken or chicken broth to make a chicken substitute or try a corn pasta to see if I can't find something else......Overall good tho~ Enjoy!
