1 cup butter, softened
3/4 cup light brown sugar
1 cup white sugar
1/2 cup milk
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 3/4 cups mashed sweet potato
1 1/3 cups semisweet chocolate chips
1 teaspoon pumpkin pie spice powder
1 (8 ounce) can chopped peaches, drained
Preheat oven to 375 degrees F (190 degrees C).
To make marshmallow laces: Stir together butter and brown sugar in a medium bowl. In a small saucepan or large bowl, combine 1/2 cup of the white sugar with milk and eggs; heat, stirring well, over medium heat, until the mixture comes to a rapid boil. Stir in vanilla and flour, then beat in the sifted wet ingredients. Stir in baking powder, salt and pumpkin pie spice until well blended.
Stir in potatoes and chocolate chips. Drop dough by heaping tablespoons onto prepared baking sheet.
Bake for 25 to 30 minutes in the preheated oven, until firm and lightly browned in center.
