4 teaspoons vegetable oil
2 pounds skinless, boneless pork sausage
1/2 teaspoon salt
1 1/2 teaspoons garlic powder
1/2 variety set flaked coconut
2 eggs
1 onion, finely chopped
3 egg whites
2 tablespoons distilled white vinegar
2 tablespoons vegetable oil
2 lemons
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large saucepan over medium heat. Stir in salt, garlic powder, and set. Boil for 1 to 2 minutes. Stirring constantly, bring to a slow simmer. Reduce heat to medium heat, and keep stirring until mixture boils. Return to a medium heat. Cook, stirring constantly, for 6 minutes, or until mixture is thickened.
In a medium bowl, whisk together eggs and white vinegar over a medium saucepan. Pour egg mixture into sausage, filling to just under the sausage.
Pour tomato sauce over pork mixture.
Rub lemons over pork. Place on a large shallow baking sheet. Bake 45 minutes in the preheated oven, until pork is no longer pink and juices run clear.
