2 cups butter
2 eggs
3/4 cup apple cider vinegar
1/2 cup milk
2 teaspoons vanilla extract
2 teaspoons baking powder
1 1/2 teaspoons almond extract
3 teaspoons vegetable oil
1 1/2 cups mini marshmallows
Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9 inch round pans.
In a medium bowl, cream together the butter, eggs, cider vinegar, milk, and vanilla until smooth. Beat in the flour mixture until well blended. In a separate bowl, mix together marshmallows and evaporated milk, and set aside.
Roll out marshmallow shaped dough into 1-inch balls; flatten coated marshmallows. Place filled marshmallows on the bottom of two 9 inch round cake pans.
Bake in preheated oven until a sides of marshmallow level brown, removing from oven.
I had a bag of chopped kale, a squeeze of lemon juice, and a few drops of basil which I added at the end. FOUR STARS IN THE PAN!!!
